Valorização de resíduos da produção de cerveja como fonte de compostos bioativos antioxidantes

Uma grande quantidade de resíduos sólidos provenientes da produção de cerveja é gerada anualmente no Brasil o que poderia ser usado como uma fonte potencial de compostos bioativos. O presente trabalho avaliou o trub quente de três tipos diferentes de cerveja, nomeados de acordo com o lúpulo adicionado: Bobek, Cascade e Hersbrucker. O efeito de diferentes solventes hidroalcoólicos na extração de fenólicos totais, flavonoides e atividade antioxidante pelos métodos DPPH, ABTS e habilidade quelante foi avaliado. Verificou-se que o solvente exerceu um efeito significativo nestes fatores. Quantificou-se os teores de antocianinas e flavonoides amarelos dos resíduos. Para todos estes fatores foi observado a influência do tipo de malte e lúpulo utilizado na produção das cervejas, que resultou em resíduos com diferentes quantificações destes compostos e potenciais antioxidantes distintos. Pelo coeficiente de correlação de Pearson foi possível observar uma correlação alta e positiva entre a atividade antioxidante pelos três métodos e os teores de fenólicos totais ou flavonoides. Os três resíduos apresentaram alta habilidade quelante, superior ao padrão EDTA, que pode ser atribuído a presença de compostos fenólicos e das humulonas presentes no lúpulo. Esta pesquisa demonstrou que esses subprodutos da cervejaria são uma boa fonte de compostos antioxidantes, que poderiam ter aplicações potenciais nas indústrias alimentícia, farmacêutica e cosmética.
